	mions from SU(2) to SU(N)\n\nAbstract: We discuss the instabilities upon th
	e introduction of local Coulomb \nrepulsion and explicit SU(N)-symmetric He
	isenberg-like spin exchange to \nDirac Fermi-surfaces\, quadratic band touc
	hing point-like Fermi-surfaces \nand full Fermi-surfaces. We explore the qu
	antum phases emerging in the \nSU(N)-symmetric Hubbard and Heisenberg model
	s on the honeycomb lattice\, \nBernal-stacked honeycomb bilayer and the squ
	are lattice at half-filling \nby means of projective (zero temperature) qua
	ntum Monte Carlo \nsimulations from SU(2) to the large-N limit for even val
	ues of N. The \nextension to higher symmetries allows us to study the melti
	ng of phases \nas a function of correlations as well as symmetry. We find S
	U(N)-spin \nsymmetry broken phases at small values of N and weak coupling\,
	 and \nstaggered flux phases\, resonating valence bond plaquettes as well a
	s \ncolumnar valence bond crystals in the limits of large-N and strong \nin
	teractions.
